Description

This recipe starts by thoroughly washing hominy white corn to remove excess starch and impurities before cooking it in water under pressure for 40 minutes until soft. The porridge base is then enriched by combining various coconut ingredients: canned coconut milk, dehydrated and unsweetened shredded coconut, sweetened condensed milk, and milk, sweetened lightly with sugar. Warm spices such as a cinnamon stick, whole cloves, and vanilla bean or extract are added to infuse aromatic flavor during the final simmer.

After mixing the cooked corn with the coconut milk mixture, the porridge simmers on an open sauté setting for 10-15 minutes, allowing the flavors to meld and the mixture to thicken to a comforting, creamy consistency.   • 5 cups of water
  • 500 g Hominy corn white, package
  • 1/2 cup sugar
  • 2 cups milk
  • 1 14 oz sweetened condensed milk canned
  • 1 cinnamon stick
  • 3 cloves
  • 1 vanilla bean or 1-2 tsp of vanilla bean extract, whole
  • 1 cup coconut dehydrated, unsweetened, shredded
  • 1 13 oz coconut milk canned
  • nutmeg a pinch

Instructions

  1. Wash the corn using a strainer until the water runs clear, then let it drain for a few minutes.
  2. Add the washed corn to an instant pot, or pressure cooker, and add all 5 cups of water. Cover and cook on manual for 40 mins.
  3. While the corn is cooking, hydrate the shredded coconut - In a medium bowl add the coconut, the milk, the condensed milk, the sugar, the coconut milk and the spices.
  4. When the corn is cooked, safely release the pressure and open the pan.
  5. Add the milk-coconut mixture to the cooked corn and cook on sauté mode (open) for 10-15 mins.
  6. Serve with some cinnamon or with toasted coconut (optional)
