Bread and Butter Hot Cross Bun Pudding

Bread and Butter Hot Cross Bun Pudding uses sliced spicy, fruity hot cross buns layered with butter and soaked in a warm, frothy mixture of milk powder, sugar, eggs, and vanilla. Baked in a water bath, the pudding turns out rich and moist with layered textures from the buttered bun pieces. It’s served warm, offering a comforting dessert with the familiar flavors of hot cross buns transformed into a creamy pudding form, suitable for enjoying on special occasions or dessert menus.

Description

This pudding recipe starts by slicing hot cross buns into three parts and spreading each piece with butter before layering them in a baking dish. A mixture made from milk powder, sugar, vanilla, boiling water, and eggs is whisked until frothy and poured over the bun layers. Baking the dish in a water bath at 190°C for 30 minutes gently cooks the pudding to a creamy consistency while preserving the bun's texture in layers. The use of hot cross buns imparts spices and dried fruit flavors traditionally associated with the buns, now softened in custard. Once baked, the pudding is served warm, and can be accompanied with ice cream for added richness.

This dessert can be stored covered in the refrigerator for a few days and reheated or eaten cold, though it is best enjoyed soon after cooking.
