These Breakfast BLTs with Spicy Mayo and Arugula are piled high with thick-cut bacon and a perfectly fried egg! Bake the bacon in the oven to easily make these for a crowd.

  • 4 lices bread I recommend sourdough
  • 1/4 cup mayonnaise
  • a few dashes of your favorite hot sauce
  • 2 eggs
  • 1 tablespoon butter
  • 6 lices Bacon cooked, preferably thick-cut
  • 1 cup baby arugula
  • 1 medium tomato sliced

Instructions

  1. In a small bowl, mix together the mayonnaise (1/4 cup) and hot sauce (a few dashes).
  2. Melt the butter (1 tablespoon) in a nonstick skillet over medium-high heat. Crack the eggs into the skillet and cover the pan, cooking the eggs for 3-4 minutes (or until whites are set and yolk is slightly runny).
  3. Spread 1 tablespoon of the spicy mayo on each piece of bread.
  4. Layer the arugula, tomato slices, three slices of bacon, and one egg on each sandwich.
  5. Cut in half and enjoy!

Notes

  • This recipe is for two sandwiches, but it can easily be doubled, tripled, or quadrupled to feed a crowd!
  • How to cook the bacon in bulk for a crowd: lay the strips on a rack nestled into a rimmed baking sheet (lined with foil for easy clean-up). Bake at 400 degrees F for 15-20 minutes. Here's how.
  • How to cook the eggs in bulk for a crowd: generously grease a rimmed baking sheet and add whole cracked eggs to it. Bake at 425 degrees for 5 minutes for runny yolks (or 8 minutes for fully-cooked yolks). Here's how.
  • You can also cook the bacon and then cook the eggs in the bacon grease rather than butter.
  • If you want to take the spicy mayo spread up a notch, try this homemade spicy mayo that uses chili garlic sauce, soy sauce, and even sesame oil.
