Brigadeirao is a Brazilian chocolate fudge flan made by blending sweetened condensed milk, cocoa powder, eggs, and vanilla, baked gently in a bain-marie until set and creamy. Once chilled, it forms a rich, smooth dessert topped traditionally with chocolate sprinkles.

Description

This recipe for Brigadeirao combines sweetened condensed milk, whole milk, cocoa powder, sugar, cornstarch, vanilla extract, and eggs blended until smooth. The mixture is poured into a buttered ring pan coated with sugar and baked in a bain-marie to provide gentle, even heat that helps create a tender, custard-like texture without cracking or curdling.

Once baked and cooled, the flan is refrigerated until fully set. The final flan is smooth, creamy, and fudgy with a deep chocolate flavor balanced by the sweetness of the condensed milk. Chocolate sprinkles add a traditional textural contrast on top.

Brigadeirao can be served year-round for holiday meals or casual gatherings. It holds well in the refrigerator for several days but does not freeze well due to its delicate custard consistency. An option to drizzle extra chocolate fudge along the edges can enhance richness.

Using a bain-marie properly ensures even cooking; the water should reach halfway up the sides of the pan during baking. To unmold cleanly, running a knife around the edge before inverting is helpful.

Ingredients

  • 28 oz sweetened condensed milk (or two 14-oz cans)
  • 1 cup milk whole
  • 1 cup cocoa powder unsweetened
  • ½ cup sugar
  • ½ tablespoon cornstarch
  • 1 teaspoon vanilla extract pure
  • 4 egg at room temperature, large
  • ¼ cup chocolate sprinkles good quality

Instructions

  1. Preheat the oven to 350º F (180º C). Grease a 8-inch (20 cm) ring pan with butter or no stick cooking spray. Sprinkle sugar all over. Set aside.
  2. Blend all ingredients (except the sprinkles.) in a blender until smooth. Pour mixture into the prepared pan. Bake in a bain-Marie for about 40 minutes. Remove from the oven, run a knife the edge around carefully, and place on a rack to cool.  
  3. Cover and refrigerate for about at least 4 hours, or until chilled and set. Run a knife around again and invert onto a plate. You may have to tap bottom of the pan to encourage unmolding. 
  4. Serve with chocolate sprinkles on top. If desired, drizzle chocolate fudge on the edges. 

Notes

  • Bake the Brigadeirao in a bain-marie with water halfway up the pan sides for even cooking.
  • Store the flan covered in the refrigerator for up to 5 days; do not freeze as texture may degrade.
  • If freezing, cut into portions, wrap tightly, and thaw in the fridge before serving (at own risk).
  • Serve chilled with chocolate sprinkles on top and optionally drizzle chocolate fudge around the edges.
  • This dessert suits potlucks, holidays like Easter or Christmas, and Sunday dinners.
