  • 1 cup scallions chopped
  • 1 tsp curry powder
  • 2 tsp red curry paste
  • 1/2 tsp cumin ground
  • 4 tsp soy sauce use tamari for gluten-free, low-sodium
  • 1 tbsp brown sugar
  • 2 tsp fish sauce Asian
  • 1 coconut milk light, 14-ounce can
  • 1/4 cup cilantro chopped, fresh
  • 6 tilapia 6-ounce fillets
  • salt
  • cooking spray

Instructions

  1. Preheat broiler.
  2. Heat 1/2 teaspoon oil in a large nonstick skillet over medium heat. Add the ginger, garlic, pepper and scallions; cook 1 minute. Stir in curry powder, curry paste, and cumin; cook 1 minute.
