Ingredients
- ¼ cup butter unsalted
- ½ medium yellow onion finely chopped
- 4 cloves garlic minced
- 3 cups chicken stock
- 1 can fire-roasted tomatoes 14.5 ounce
- 3 tablespoons tomato paste
- 2 cups barbecue sauce plus more for topping
- 2 tablespoons Worcestershire sauce
- 1 can sweet corn 14.5 ounce drained
- 1 can lima beans 14.5 ounce drained
- ¼ teaspoon cayenne pepper
- ½ teaspoon salt
- ½ teaspoon pepper
- 2 cups smoked pulled pork
Instructions
- Heat ¼ cup butter in a large pot over medium-high heat. Saute ½ medium yellow onion in the butter until they are tender, about 5 minutes. Add 4 cloves garlic and saute for another 2 minutes.
- Add 1 can fire-roasted tomatoes, 3 cups chicken stock, 3 tablespoons tomato paste, 2 cups barbecue sauce, 2 tablespoons Worcestershire sauce, 1 can sweet corn, 1 can lima beans, ¼ teaspoon cayenne pepper, ½ teaspoon salt, ½ teaspoon pepper, and 2 cups smoked pulled pork to the pot.
- Stir everything together until well incorporated. Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for about an hour.
- Remove the stew from the heat and serve fresh with additional BBQ sauce drizzled over the top.
