Budin De Pan (Mexican Bread Pudding) Recipe
Description
This Budin De Pan recipe soaks cubed, stale country-style bread in a custard made from milk, eggs, brown sugar, vanilla, ground cinnamon, and salt. Chopped peeled apples are folded into the custard-soaked bread to add fruit sweetness and texture. The pudding is poured into a greased baking dish and topped with a mixture of brown sugar and cinnamon, plus scattered pieces of butter.
Baking at 375°F for roughly 50 to 55 minutes allows the custard to set and the top to puff and turn golden brown. After baking, the pudding rests slightly before serving, which helps develop its structure. It is traditionally topped with whipped cream sprinkled with cinnamon sugar, bringing extra creaminess and spice.
This bread pudding is warm and moist with tender bread pieces soaked in custard, complemented by the soft apple chunks and the sweet, buttery, cinnamon-spiced topping. It is suitable as a dessert or sweet breakfast treat and highlights a common use of slightly stale bread to reduce waste and add moisture retention.
The recipe allows for personalization with add-ins such as nuts, dried fruit, chocolate chips, or liqueurs like rum or mezcal for flavor variations. Using slightly stale bread like bolillo, challah, or brioche improves the absorbency and final texture.
Ingredients
- 2 cups milk
- 1 teaspoon vanilla
- 2 large egg lightly beaten
- ½ cup brown sugar
- ¼ tsp ground cinnamon
- ½ teaspoon salt
- 4 cups bread country-style bread works best, stale, cubed
- 1 large apple peeled, cored and chopped
Topping
- ⅛ teaspoon ground cinnamon
- ½ cup brown sugar
- 2 tablespoons butter
- whipping cream and cinnamon sugar for serving
Instructions
- Preheat the oven to 375 degrees.
- Use cooking spray to grease a 2-quart baking dish and set aside.
- In a large bowl, combine the milk, vanilla, eggs, Brown Sugar, cinnamon and salt. Mix well. Add the bread and let stand until it is softened, about 10 minutes, depending on the dryness of the bread. Stir in the chopped apples.
- Pour the mixture into the prepared baking dish. Mix the cinnamon and Brown Sugar together and sprinkle over the bread mixture. Cut the 2 tablespoons of butter into little pieces and scatter them over the top.
- Bake in preheated oven for about 50 to 55 minutes or until the pudding puffs and turns golden. Remove from the oven and let stand about 10 minutes before serving.
- To serve, top with whipped cream sprinkled with cinnamon sugar.
Notes
- Use slightly stale or day-old country-style bread for better custard absorption without mushiness.
- Classic breads such as bolillo, brioche, or challah work well for texture and flavor.
- Customize by adding chocolate chips, dried fruits, nuts, or a splash of rum or mezcal for different flavors.
- Serve warm topped with whipped cream sprinkled with cinnamon sugar for traditional presentation.
