Description
Butternut Cookies are made by creaming butter and sugar, then adding egg, treacle, and vanilla essence. Milk and sifted dry ingredients, including cream of tartar, baking soda, salt, and plain flour, are combined into the mixture. Desiccated coconut added last provides a chewy texture and coconut flavor throughout the cookie.
Shaped into small balls and slightly flattened on a greased baking tray, the cookies bake in a moderately hot oven about 10 minutes, resulting in golden, soft, and chewy cookies with coconut bits dispersed inside. Their moderate sweetness and buttery base provide a comforting cookie experience.
Ingredients
- 2 tablespoons butter
- 1 cup sugar
- 1 egg
- ½ teaspoon cream of tartar
- 1 teaspoon baking soda
- 1 ½ cups plain flour
- 1 teaspoon salt
- 1 cup desiccated coconut
- ½ teaspoon vanilla essence
- 2 tablespoons treacle
- 1 tablespoon milk
Instructions
- Cream butter and sugar.
- Add beaten egg, treacle and vanilla essence and mix well.
- Add milk and sift in all of the dry ingredients except the coconut. Mix well.
- Now add the coconut and mix again.
- Form into small balls and place on a well greased baking tray. Flatten slightly with the top of your fingers if you prefer a flatter cookie.
- Bake for 10 minutes in a moderately hot oven.
- Allow to cool.
