Cajun Shrimp Boil Skewers Recipe

Cajun Shrimp Boil Skewers feature potatoes, corn, chorizo sausage, and tail-on shrimp seasoned with a Cajun lemon garlic butter. The veggies and sausage are boiled then threaded onto skewers, basted with seasoned butter, and grilled to add smoky flavor and a buttery finish.

Description

This recipe starts by boiling nugget potatoes alone for 10 minutes, then adding corn and sliced chorizo to cook for 5 more minutes until tender. The boiled ingredients are drained and then threaded along with tail-on shrimp onto long skewers for grilling.

A Cajun lemon garlic butter sauce made from salted butter, chili powder, paprika, sea salt, oregano, minced garlic, and fresh lemon juice is prepared by melting the butter and mixing in the spices and lemon. Half the butter is used for basting the skewers during grilling; the other half is kept warm for serving.

Grilling the skewers over medium-high heat for about 10 minutes, turning and basting once, adds a charred, smoky flavor and caramelizes the butter sauce onto the food. Lemon wedges are served alongside for squeezing over the finished skewers.

  • 24 potatoes nugget
  • 3 ears corn cut into 4 pieces each
  • 1 ½ lb chorizo sausage sliced into 1 ½ inch pieces
  • 1 lb Shrimp tail-on
  • ½ lemon cut into wedges

Cajun Lemon Garlic Butter

  • ½ cup butter salted
  • ½ teaspoon paprika
  • ½ teaspoon chili powder
  • ¼ teaspoon oregano each
  • ¼ teaspoon sea salt each
  • 1 clove garlic finely minced
  • lemon juice of ½ lemon

Instructions

  1. Bring a large pot of water to a boil over high heat. Add the potatoes and let them boil for 10 minutes. Add the corn and the chorizo and boil for another 5 minutes. Drain the pot.
  2. Skewer the potatoes, corn, sausage, and shrimp onto 12 long skewers. Place the skewers on a baking sheet.
  3. Oil your grill and preheat it to medium-high. In a small pan over medium heat, add all the Cajun lemon garlic butter ingredients. Let the butter melt then pour half of the butter into a small bowl. Keep the other half warm.
  4. Baste the skewers with the butter then grill for 10 minutes, turning halfway and basting once more.
  5. Serve the shrimp boil skewers with the lemon slices and the warm butter on the side.
