Caramel Cashew Chocolate Fudge

A rich chocolate fudge topped with caramel and cashews. All of my favorite things in one delicious and easy to make fudge!

Ingredients
- 1 cup Butter, cut into 8 pieces
- 2 cups semi-sweet chocolate chips
- 2 cups milk chocolate chips
- 4 ½ cups granulated sugar
- 1 (12-ounce) Can evaporated Milk
- 1 teaspoon vanilla extract
Caramel Cashew Topping
- 1 (12-ounce) bag soft caramels, unwrapped (like Kraft)
- 1 tablespoon heavy cream
- 1 cup cashews halves and pieces, I used salted
Instructions
- Line a 13 x 9 x 2-inch pan with aluminum foil or parchment paper and lightly spray with nonstick cooking spray. Place 1 cup butter,, 2 cups semi-sweet chocolate chips, and 2 cups milk chocolate chips in a large bowl. Set aside.
- In a large saucepan combine 4 ½ cups granulated sugar and 1 (12-ounce) can evaporated milk. Bring to a boil over medium high heat stirring constantly for 10 minutes.
- Pour the sugar mixture over the chocolate chips and butter. Beat the mixture for 3 minutes using an electric hand mixer. Mix in the 1 teaspoon vanilla extract.
- Spread the chocolate into the prepared pan. Allow it to completely cool before adding the topping.
- Add 1 (12-ounce) bag soft caramels, and 1 tablespoon heavy cream in a microwave-safe bowl. Heat in the microwave, stirring 30 seconds at a time, until melted and smooth. Pour and spread evenly on top of the fudge.
- Top evenly with 1 cup cashews halves and pieces, and gently press into the caramel. Let it completely cool. I liked to pop mine into the fridge for a bit right before cutting.
