Caramel Pecan Turtle Candy

Caramel Pecan Turtle Candy features clusters of toasted pecan halves arranged with melted caramel and topped with melted dark or semi-sweet chocolate. Optional chopped pecans and sea salt flakes add texture and a little contrast. The baked caramel softens and melds with the nuts to create a chewy base, while the chocolate adds richness and a smooth finish. These candies set firm after chilling, making individual bite-sized sweet snacks that combine nutty, buttery, and chocolate flavors.

Description

This recipe starts by lightly toasting pecan halves to deepen their flavor. The pecans are arranged in a "Y" shape on parchment-lined sheets before placing an unwrapped caramel candy in the center of each cluster. The tray is baked at 350°F just until the caramel begins to melt. Gentle pressing helps soften and flatten the caramel over the nuts.

Once slightly cooled, melted chocolate chips are spooned over each cluster, covering the caramel and nearly all the pecans except for the tips. Sprinkling finely chopped nuts and optional sea salt flakes on top adds texture and a slight salty balance against the sweetness.

After chilling until set, these candies are ready to serve as a nostalgic candy treat. The interplay of toasted nuts, buttery caramel, and rich chocolate creates the classic turtle candy profile with a chewy, creamy, and crunchy combination.

Fresh caramel candies melt more easily and flatten with less effort. The candies can be stored airtight up to five days to keep their quality.

Ingredients

Servings
  • 72 pecan halves
  • 24 caramel candies unwrapped
  • 6 ounces chocolate chips dark chocolate or semi-sweet
  • 1/8 cup pecans finely chopped (optional)
  • sea salt optional, flakes

Instructions

  1. Heat oven to 350 degrees F. Place a sheet of parchment or silpat, on a cookie sheet. Lightly toast pecans for 2-3 minutes.
  2. For each candy, place 3 pecan halves in a "Y" shape on the foil.
  3. Place on caramel over the center of each cluster of pecans. Bake about 6-7 minutes, just until the caramel melts. The caramels might still appear un-melted, press them gently with the back of a spatula to flatten slightly. Cool 2-3 minutes.
  4. Melt chocolate chips over a very low heat (or use a double boiler), stirring. Spoon chocolate over the candies, leaving just the tips of the pecans uncovered. Sprinkle with additional nuts or sea salt flakes. Chill until chocolate firms, about 10 minutes. Makes 24 turtle candies.

Notes

  • Use fresh caramel candies to ensure easier melting and smoother texture.
  • Flatten the caramels slightly before baking to help them melt evenly.
  • Top the candies with sea salt flakes or finely chopped pecans for added flavor and texture.
  • Store the candies in an airtight container for up to five days to maintain freshness.
