Carioca Recipe

Carioca is a fried glutinous rice flour ball coated in a caramel sugar syrup, resulting in a crispy, sweet snack with a chewy center. Dipped into a caramelized syrup, the rice balls absorb the sugary coating that hardens slightly, creating a pleasant textural contrast. Typically skewered for easy serving, this treat makes for a fun and finger-friendly dessert or snack.

Description

The preparation of Carioca involves mixing glutinous rice flour with water to form a dough, which is then shaped into small balls. These balls are fried in hot oil until they puff up, turn light golden, and roughly double in size. Their interior remains soft and chewy due to the glutinous rice flour.

After frying, the rice balls are coated in a hot caramel sugar syrup that gives a glossy, sweet exterior. Poking holes in the balls before frying prevents bursting by allowing steam to escape. The cooked and syrup-coated balls are usually served skewered on bamboo sticks, making them convenient edible treats.

The sugar syrup is cooked just until bubbly and combined carefully with the fried balls to ensure complete coating without dissolving the exterior’s crispiness. The candy-like finish seals in moisture for a balanced crunchy and chewy texture.

Ingredients

Servings

For the Rice balls

  • 1 cup glutinous rice flour
  • ½ cup water more or less
  • neutral cooking oil for frying, generic cooking oil

For the Sugar Syrup

  • 1 cup sugar
  • ¼ cup water

Instructions

  1. Combine glutinous rice flour and water in a bowl and mix until a dough forms.
  2. Get a tablespoon of the dough and roll it into a ball. Do the same for the rest of the dough. Poke holes through them to prevent them from breaking/bursting too much when fried.
  3. Pour oil into a pan/skillet and heat over medium heat.
  4. Fry the balls in batches, if needed. Turn them from time to time for even cooking. Cook until they are light gold and double in size.
  5. Remove the carioca balls from the hot oil and transfer them to a cooling rack lined with paper towels.
  6. Make the caramel syrup by combining the sugar and water in a saucepan. Stir until sugar is dissolved . Cook over medium-low heat until bubbly.
  7. Turn the heat off and add the carioca balls to the pan. Gently stir to make sure the balls are fully coated with syrup.
  8. Skewer the rice balls into bamboo sticks and serve!
