Description
The recipe begins by cleaning and wilting banana leaves briefly over high flame to soften them, making folding easier. The cassava is thawed, drained if frozen, then combined with sugar and coconut milk creating a smooth, sweet mixture. Spoonfuls are placed onto the leaves, shaped into logs, then tightly folded and tied with kitchen twine.
Steaming the wrapped suman for 35 to 45 minutes cooks the cassava mixture through, turning it firm yet tender. The wrapped steaming method keeps moisture in and allows the banana leaf aroma to infuse the suman. The resulting texture is smooth and pleasantly chewy with a subtle sweetness balanced by the coconut milk’s creamy richness.
Cassava Suman is served slightly cooled as a snack or dessert and can be eaten plain or with grated coconut on the side for added texture. It is a traditional treat in the Philippines, often enjoyed during special occasions or as a daily sweet bite.
Passing the banana leaves quickly over flame prevents tearing during wrapping. Adding grated coconut to the cassava mixture is optional for added texture and flavor variation.
Ingredients
- 2 packages cassava frozen grated, thawed and drained or 4 cups freshly grated
- 1 cup sugar
- ½ cup coconut milk
Instructions
- With a damp cloth, gently wipe surfaces of banana leaves to remove any dirt or grit. Over high flames, quickly pass leaves for about 3 to 5 seconds to wilt.
- In a bowl, combine cassava, sugar, and coconut milk.
- Spoon about 2 heaping tablespoons of mixture onto a banana leaf and shape into a log. Fold banana leaf over mixture to enclose and roll tightly into a log. Fold both ends and tie with kitchen twine.
- Arrange prepared suman in a steamer and steam for about 35 to 45 minutes or until firm. Remove from steamer and allow to slightly cool.
Notes
- Passing banana leaves over high flames softens them and makes folding easier without damaging leaves.
- For texture variation, grated coconut can be mixed into the cassava blend before wrapping and steaming.
