In this Danish Apple Cake, the combination of Bramley cooking apples and sweeter dessert apples is stewed with granulated and vanilla sugar until tender, offering a balance of tart and sweet flavors. The apple mixture is layered with coarsely crushed oat cookies, like Hobnobs, providing a contrasting crispness to the smooth stewed apples.

The dessert is topped with whipped cream and finished with a garnish of grated dark chocolate which adds richness and a slight bitterness, complementing the sweet and tart components.   • 500 g bramley apples
  • 500 g apple dessert variety
  • 3 tbsp granulated sugar
  • 2 tsp vanilla sugar
  • 200 g oat cookie eg Hobnobs
  • 300 ml whipping cream
  • 15 g dark chocolate grated

Instructions

  1. Peel, quarter, core and finely slice apples dropping them into a pan filled with water as you prepare (to prevent browning).
  2. Drain the apples and add 1 tablespoon water, 3 tablespoons granulated sugar and, 2 teaspoons vanilla sugar to the pan.
  3. Bring pan to a simmer and stew apples gently under a lid until tender (about 10 - 15 minutes).
  4. Transfer stewed apples to a bowl and allow to cool.
  5. Whip the cream in a bowl until softly stiff, then refrigerate.
  6. Put the oat cookies in a bowl and crush with the back of a rolling pin until you have irregular crumbs. (Using a food processor just turns them into too fine a crumb).
  7. Spoon a layer of cooled stewed apple into 6 serving glasses/goblets or one large bowl followed by a layer of crushed cookies, then repeat and top with a layer of whipped cream and grated chocolate.
  8. Serve straight away or chill in the fridge until serving.

Notes

  • If Bramley apples are unavailable, use all dessert apples and reduce sugar slightly.
  • Oat cookies can be replaced with Amarettini biscuits, granola, or ginger biscuits to vary texture and flavor.
  • All components can be prepared a day ahead and assembled just before serving for ease.
  • Grate chocolate using a potato peeler for best results.
  • Gluten-free oat cookies can be used to make this dessert gluten-free.
