Ingredients
- 1 tablespoon olive oil
- 1 cup diced onions
- 1 pound 80% lean ground beef
- 1 tablespoon steak seasoning or 1 teaspoon salt + 1 teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 8 ounces Cabot Extra Sharp Cheddar Cheese shredded (divided)
- 12 egg roll wrappers
- ¼ cup vegetable oil for frying
- Thousand Island dressing optional - for dipping

Instructions
- Heat the olive oil in a large skillet on the stove over medium-high heat.
- Add the onions and cook for 5-6 minutes.
- Add the ground beef, crumble and cook until browned, approximately 5-6 minutes.
- Drain any grease from the skillet, then season the ground beef with the steak seasoning and worcestershire sauce, simmer for 1-2 minutes.
- Remove the skillet from the heat and stir in 1 cup of shredded cheddar cheese.
- Place an egg roll wrapper on a work surface with one corner pointing towards you.
- Add 1 tablespoon shredded cheddar cheese in the middle of the wrapper, then top with 3-4 tablespoons of the cheeseburger mixture.
- Fill a small bowl with water. Dip your finger into the water, then brush the edges of the egg roll wrapper with water to help seal the egg rolls.
- Fold the corner closest to you over the cheeseburger mixture, and tuck.
- Fold the sides in.
- Roll tightly, set aside and repeat with remaining egg rolls.
- Pour the vegetable oil in a large skillet, heat the oil over medium-high heat.
- Once the oil is hot, add 4-5 spring rolls to the skillet.
- Cook for 2-3 minutes, flip and cook for an additional 2-3 minutes on the opposite side.
- Remove from the skillet and place on a wire rack to cool, or a plate lined with paper towels.
- Repeat until all of the egg rolls are cooked.

To make the egg rolls in an air fryer:
Place the prepared egg rolls in an air fryer basket and spray with cooking spray. Cook at 400°F for 10 minutes, flipping halfway through the cooking time.

- The cheeseburger egg roll filling can be made up to 3 days in advance, and stored in the refrigerator until ready to assemble. The egg rolls can be assembled, and stored in the refrigerator up to 4 hours in advance.
- The nutritional information provided does not include the optional Thousand Island dipping sauce. If the egg rolls are prepared in an air fryer or baked in the oven, therefore eliminating the need for the 1/4 cup vegetable oil, the calories, fat and saturated fat will be reduced by 41 calories per egg roll, 5 grams of fat and 1 gram of saturated fat.
