Cheesy Bacon BBQ Chicken
Description
The recipe calls for seasoning chicken breasts with salt, black pepper, garlic powder, and onion powder, then placing them over a bed of thinly sliced sweet yellow onions in a casserole dish. Each breast is coated with BBQ sauce and covered with cheddar cheese before baking covered for 25 minutes, then uncovered to brown the cheese and ensure doneness at 400˚F. The chicken cooks to an internal temperature of 165˚F, resulting in tender, juicy meat.
The onions beneath add moisture and sweetness to the dish, absorbing some of the sauce. The final addition of crumbled bacon and chopped green onions introduces crunchy texture and fresh, sharp notes, complementing the rich cheese and savory BBQ flavors. The dish combines multiple textures from tender chicken, melted cheese, and crispy bacon.
This dish can be served as a main course paired with sides like vegetables or potatoes. The recipe suggests options for freezing as a meal prep and ideas for utilizing any leftovers.
