  • 3 cups cauliflower florets
  • 2 cups cooked, shredded chicken
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup buffalo sauce
  • 2 cups Cabot Seriously Sharp Cheddar Cheese shredded

Instructions

  1. Preheat the oven to 375°F.
  2. Bring a large pot of salted water to boil on the stove.
  3. Add the cauliflower and boil for 10 minutes.
  4. Drain the cauliflower, then place it back in the pot it cooked in.
  5. Add the cooked, shredded chicken, garlic powder, onion powder, salt and pepper and toss to coat the chicken and cauliflower.
  6. Add the buffalo sauce and 1 cup of shredded Cabot Cheddar Cheese and toss everything together.
  7. Transfer the mixture to an 8” x 8” baking dish.
  8. Sprinkle the remaining cup of shredded Cabot Cheddar Cheese on top of the casserole.
  9. Place in the oven and bake for 20 minutes.
