Cheesy Potato Casserole is a favorite at any party or holiday gathering. This dish is so easy to make too! Tender hash browns are mixed with a creamy cheese sauce, topped with corn chips, then baked to golden brown perfection.

Ingredients
- 1 (30 to 32-oz) bag frozen shredded hash browns
- 2 tsp Italian seasoning
- 2 cups almond milk or other milk of choice
- 2 tbsp cornstarch
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 cups shredded cheddar cheese
- 1 cup grated Parmesan cheese divided
- Kosher salt and ground pepper to taste
- 2 cups crushed corn chips I use chili or paprika flavored
- Optional: freshly chopped parsley to garnish

Instructions
- Preheat the oven to 400F. In a large bowl place the hash browns and the Italian seasoning.
- To a medium saucepan add the almond milk, cornstarch, onion, and garlic powder. Whisk until smooth, then place over medium heat and simmer for a couple of minutes, until the sauce thickens. Stir in the cheddar cheese and half of the parmesan cheese, and season to your taste. Once the cheese melts and the sauce is smooth, remove from heat.
- Pour the cheese sauce over the hash browns and stir well to combine. Transfer the hash brown mixture to a baking dish. Top with the remaining parmesan cheese and crushed corn chips. Cover with aluminum foil and bake for 30 minutes, then continue to bake uncovered for 15 minutes more.
- Garnish with chopped parsley, if desired and serve warm.
Notes
- Storing leftovers: Place any leftover potato casserole in an airtight container in the refrigerator for up to 4 to 5 days.
- To reheat: Pop individual servings in the microwave and cook for 30-second intervals until it’s warm. You can also place the casserole dish in the oven at 325ºF. If using the oven, loosely cover with foil (since it has already been baked) and place the dish on the center rack for 15 to 25 minutes, until warmed through (the larger the serving, the longer the cooking time).
- Freezing: Place leftovers in an airtight freezer-safe storage container or a freezer-safe baggie in the freezer for up to 3 months. Let thaw overnight in the refrigerator before reheating.
