Cheesy Sweet Potato Noodles Recipe (Vegan)

This cheesy sweet potato noodles recipe with black beans and spinach is guaranteed to become a favorite! It’s entirely vegan, dairy-free and great as either a main course or a side dish that’s ready in 15 minutes.

Ingredients
- 1 tbsp olive oil
- 1 lb sweet potato spiralised
- 2 tbsp vegan butter
- 1 large onion diced
- 2 cloves garlic minced
- ½ tsp salt
- ½ tsp paprika
- ½ tsp cumin
- ½ tsp onion powder
- 2 tbsp flour
- 1 ½ cups plant based milk
- ½ cup vegan cheese
- 1 can black beans
- ½ cup scallions chopped
- 3 cups spinach

Instructions
- Heat the olive oil in a frying pan and add the spiralised sweet potato. Fry for around 5 minutes, tossing frequently, until starting to brown.
- Melt vegan butter in a saucepan over a medium heat and add an onion, garlic, salt, pepper, paprika, cumin and onion powder. Cook for 5 minutes, until softened and fragrant.
- Add flour and stir together, before gradually adding in plant based milk and whisking until the sauce thickens before adding more.
- Add grated vegan cheese and stir once again until the cheese melts.
- Add the black beans to the noodles together with the sauce, followed by spinach and scallions. Serve when the spinach wilts.
