Cheesy White Bean Tomato Bake Recipe

Cheesy White Bean Tomato Bake combines garlic-scented fire-roasted tomatoes with butter beans and spinach, topped with fresh basil, Parmesan, and mozzarella cheeses. Baked until bubbly and lightly browned, it offers a meld of creamy beans, tender greens, and melty cheese in a savory tomato base, suitable as a vegetarian main or side dish.

Description

This bake starts with sautéing thinly sliced garlic in olive oil to release its aroma before adding fire-roasted tomatoes seasoned with Italian herbs, salt, and pepper. Butter beans are stirred in for a creamy, mild texture, while fresh baby spinach is added and wilted before incorporating sliced basil for herbal brightness. A small amount of water is mixed in to maintain moisture during baking.

The dish is topped with grated Parmesan and mozzarella, then baked at 400°F until the cheese melts and the beans bubble through the tomato. An optional broil step adds a golden crust to the cheese topping. The result is a warm, cheesy casserole with contrasting textures between soft beans, tender greens, and melted cheese, all flavored by the tomato and herbs.

This recipe suits vegetarian diets and can be served as a comforting vegetarian main or a side dish. The use of fire-roasted tomatoes imparts a slight smokiness, complementing the mellow flavors of the beans and cheese.
