Cherry Clafoutis

Cherry Clafoutis is a baked French-style dessert featuring a batter made with eggs, milk, yogurt, sugar, flour, and flavored with vanilla and almond extracts, poured over fresh pitted cherries. The texture is soft and slightly custardy with a lightly golden top. It’s finished with powdered sugar and toasted almonds for contrast.

Description

Cherry Clafoutis combines eggs, whole milk, Greek yogurt, granulated sugar, flour, sea salt, vanilla, almond extract, melted butter, and lemon zest to form a smooth batter. After resting, the batter is divided into greased ramekins and topped with sweet or tart cherries. Baking at 350°F for 30-35 minutes yields a delicately set, lightly browned custard around the fruit.

The finished clafoutis has a tender, creamy texture with a slight sweetness and subtle almond and lemon notes. The cherries add juicy bursts throughout the dish. Dusting with powdered sugar and sliced toasted almonds adds a pleasant crunch and decorative touch.

This dessert is best served warm or at room temperature. It can be a refined yet simple way to showcase seasonal cherries and pairs nicely with coffee or tea.
