Cherry Clafoutis

Cherry Clafoutis is a baked French custard dessert featuring pitted fresh or canned sweet cherries within an egg-and-flour batter. It results in a tender, mildly sweet custard with soft cherries, dusted with powdered sugar. This dessert can be served warm or cold and is suitable for various occasions.

Description

Cherry Clafoutis involves arranging cherries in a buttered baking dish and pouring a smooth batter made from eggs, sugar, milk, flour, vanilla, and almond extracts over them. Baking at 350°F for about 35 to 45 minutes sets the custard around the cherries. The surface is dusted with additional sugar before baking for a light caramelized top. It can be served at room temperature or chilled.

The texture is creamy custard with tender, juicy pockets of cherry. The subtle almond and vanilla notes enrich the flavor. The slight caramelization on top adds a bit of texture contrast. This dish serves well as a dessert or a sweet brunch item.

Cherries may be fresh, canned (drained), or thawed frozen, with fresh pitted cherries preferred for easy eating. It stores refrigerated for up to four days and reheats gently, either in short microwave bursts or an oven at 350°F covered with foil.
