Cherry Clafoutis

Cherry Clafoutis is a baked French dessert featuring a flan-like batter poured over fresh or thawed pitted cherries. Baked until golden and set yet slightly jiggy, this result is a tender, custardy dish enhanced by vanilla and almond extracts. A dusting of powdered sugar adds a delicate sweetness and makes an elegant presentation.

Description

Cherry Clafoutis combines a smooth batter of milk, cream, eggs, flour, sugar, and melted butter, flavored with vanilla and almond extracts. The cherries placed at the bottom of a buttered baking dish provide bursts of tart and sweet fruit throughout. The batter is blended until smooth, poured over the fruit, and baked at moderate heat until the top is golden and the center is just set but still slightly wobbly.

The texture is soft and custardy, contrasting with the juicy cherries. This dish is best served warm and can be accompanied by whipped cream or vanilla custard to enhance the creamy experience. Powdered sugar dusting adds a touch of elegance and extra sweetness.

Allowing the clafoutis to cool briefly before serving helps it set properly while retaining its moist texture. Using fresh or properly thawed frozen cherries ensures no excess moisture dilutes the batter. The use of almond extract complements the cherry flavor subtly without overpowering it.
