Cherry Vareniki (Cherry Dumplings)

Cherry Vareniki are tender dumplings filled with sweetened pitted cherries. The dough is enriched with eggs and sour cream, making it pliable yet slightly firm after boiling. These half-moon dumplings are sealed tightly to keep the juicy cherry filling contained during cooking, resulting in a balanced combination of soft dough and a sweet, fruity interior. They are suited for a dessert or a special treat using fresh cherries.

Description

Cherry Vareniki feature a delicate dough made from eggs, sour cream, lukewarm water and milk, kneaded with flour, sugar, and salt. The dough is rolled thin and cut into circles, which are then stretched and filled with pitted cherries tossed with sugar. The filled dough pieces are folded into half-moon shapes, ensuring a tight seal to prevent leakage when boiled. This preparation preserves the cherries' juicy texture within a mild, tender wrapper, offering a contrast between a soft exterior and sweet fruit inside.

The dough composition with sour cream and eggs gives it slightly richer texture compared to simple flour and water doughs. Preparing and sealing each vareniki carefully is important to maintain the filling intact. Cherry Vareniki are typically boiled until the dough is cooked through and can be served with toppings such as sour cream or sugar, depending on preference.

Ingredients

Servings

Cherry Filling

  • 1 lb Cherry pitted
  • 1/3 cup sugar

Vareniki Dough

  • 2 egg large
  • 2 tbsp sour cream
  • 1/2 cup water lukewarm
  • 1 cup milk lukewarm
  • 4 cups all-purpose flour depending on brand may need a bit more
  • 3 tbsp sugar
  • 1 tsp salt

Instructions

Cherry Filing

  1. Pit the cherries and cut each one into halves or quarters, depending on their size. Measure out the sugar in a separate bowl.

Vareniki Dough

  1. In the bowl of a stand mixer or a large bowl, whisk together the eggs, sour cream, lukewarm water, and milk until evenly combined.
  2. Add the flour, sugar, and salt to the liquid ingredients. Using the dough hook attachment or your hands, knead the dough until it is no longer sticky.

Making Vareniki

  1. Transfer the dough to a well-floured surface and roll it out to about 3 mm thickness (or two stacked pennies) with a rolling pin. Using the floured rim of a glass or a biscuit cutter, stamp out circles in the dough.
  2. Working with one circle at a time, lightly stretch out the dough in your hand. Fill the center with a spoonful of cherries and a sprinkle of sugar.
  3. Fold the dough over to form a half-circle and firmly pinch the edges with your fingers. Make sure the edges are tightly sealed so the filling doesn't leak out.
  4. Bring a large pot of water to a boil. Add 10-20 vareniki and cook until they float to the top. Drain the vareniki or take them out with a slotted spoon, then immediately top them with a few small slices of unsalted butter. Optionally, serve them with sour cream, more cherries, or sugar.
