Chicken Tikka Masala Recipe

Chicken Tikka Masala combines marinated chunks of chicken thigh cooked under a broiler with a spiced tomato and cream sauce. The marinade includes yogurt, lemon juice, and a blend of garam masala, turmeric, coriander, cumin, chili powder, paprika, and salt. The sauce simmers onions, garlic, ginger, and spices like honey and tomato paste until rich and flavorful before finishing with cream for a smooth consistency.

Description

The Chicken Tikka Masala Recipe features bite-sized chicken thigh pieces marinated with yogurt, lemon juice, and a ground spice mix containing garam masala, turmeric, coriander, cumin, chili powder, paprika, and salt. Marinating tenderizes the chicken and infuses it with flavor. The chicken is then broiled until cooked through, developing slight charring for added texture.

The sauce begins by sautéing finely minced onion, ginger, and garlic until golden, to build a savory base. Tomato paste and honey are added for sweetness and depth before canned tomato sauce is simmered in with the remaining spices. Adding heavy cream mellows the sauce to a creamy consistency that coats the chicken pieces well. Additional water can be used to adjust thickness.

This dish is served garnished with fresh cilantro and pairs well with steamed rice or flatbreads. The balance of warm spices, the tanginess of the tomato, and the richness of cream creates a flavorful curry that is satisfying and comforting.

Servings

The Spices

  • 4 teaspoons garam masala
  • 2 teaspoons Turmeric
  • 2 teaspoons Coriander
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • 2 teaspoons paprika
  • 2 teaspoons salt

Chicken Tikka

  • 1 lb chicken thigh cut into bite-sized pieces, boneless
  • ½ cup yogurt
  • 2 tablespoons lemon juice

The Sauce

  • 1 tablespoon neutral cooking oil generic cooking oil
  • 1 large onion finely minced
  • 2 tablespoons ginger minced
  • 4 cloves garlic minced
  • 2 tablespoons tomato paste
  • 2 teaspoons honey
  • 14 ounce tomato sauce canned
  • ½ cup heavy cream

Instructions

  1. Mix all the spices together in a small bowl.
  2. Place the chicken in a medium-sized bowl and add the yogurt, lemon juice, and 2 tablespoons of the spice mix. Mix well then place into your fridge to marinate.
  3. Heat the oil in a large pan over medium heat. Add the onion, ginger, and garlic and cook until the onion is golden brown, about 10 minutes. Add the honey, tomato paste, and the remaining spice mix and let it cook for 2-3 minutes. Add the tomato sauce and bring it to a simmer. Stir in the cream. Note: add up to 1 cup of water to thin the sauce, if needed.
  4. Preheat your oven to broil. Transfer the marinating chicken to a baking sheet and spread them out. Broil (with the rack in the middle of the oven) for 12 minutes, or until the chicken pieces are cooked through.
  5. Add the chicken pieces and any of the tasty charred bits on the pan to the sauce. Serve with a little cilantro sprinkled over the top.
