Chicken Zoodles Recipe

This Chicken Zoodles Recipe combines tender cooked chicken with spiralized zucchini and carrot noodles, all coated in a creamy cashew butter sauce with a hint of lime and chili heat. The sauce thickens quickly in the pan, clinging to the veggie noodles and chicken pieces to create a comforting yet lighter meal alternative. Cashews add a satisfying crunch, and fresh cilantro brightens the dish. This recipe offers a nutritious option for those looking to enjoy vegetables in a flavorful, saucy dish without traditional pasta.

Description

The Chicken Zoodles Recipe features chicken thighs or breasts cooked until tender, then combined with spiralized zucchini and carrot noodles that soften slightly during a brief sauté. The sauce is a unique blend of chicken stock, cashew butter, soy sauce, honey, garlic, lime juice, and chili sauce, which thickens quickly once heated with the chicken. This rich and creamy sauce balances savory, sweet, and tangy flavors with a subtle kick from chili. The addition of roasted cashews introduces textural contrast, while fresh cilantro adds a herbal brightness.

The dish can be served immediately after tossing the noodles and sauce together, providing a warm, saucy meal that highlights vegetable noodles as a substitute for traditional pasta. The interplay of tender chicken, slightly softened veggie noodles, and creamy sauce creates satisfying mouthfeel and flavor complexity.

This recipe is suitable for those seeking a protein-rich meal paired with fresh vegetable noodles in a creamy, mildly spicy sauce. Because the veggie noodles soften during a short cooking time, the dish maintains some firmness and prevents sogginess.

Ingredients

Servings
  • 1 teaspoon avocado oil
  • 4 chicken thigh or 2 chicken breasts, cut into bite-sized pieces, boneless
  • 2 medium zucchini spiralized
  • 2 medium carrot spiralized
  • ½ cup cashew roasted
  • ¼ cup cilantro chopped

The Sauce

  • ½ cup chicken stock
  • 4 tablespoons cashew butter can sub almond butter
  • 1 tablespoon soy sauce gluten-free, if needed
  • 1 teaspoon hot chili sauce
  • 1 teaspoon honey
  • lime juice from 1
  • 2 cloves garlic finely minced

Instructions

  1. Heat the avocado oil in a large skillet over medium-high heat. Add the chicken and cook, stirring occasionally, until it is no longer pink, about 7 minutes.
  2. While the chicken is cooking, spiralize the zucchinis and carrots.
  3. When the chicken is cooked, remove the pan from the heat and push the chicken to one side of the pan. Add all the sauce ingredients to the pan and stir them together.
  4. Put the pan back on the heat and stir the chicken through the sauce. Once the sauce thickens (about 1 min) add the veggie noodles to the pan and toss to coat them in the sauce. Let them cook for 3-4 minutes, or until they start to soften. Toss with the cashews and cilantro and serve right away.
