Chicken Zucchini Stir Fry

Ingredients

  • 1 ½ lbs chicken breast cut into 1-inch cubes, boneless skinless
  • 3 tablespoons neutral cooking oil divided, generic cooking oil
  • 1 zucchini 1 ½ cups, quartered
  • 1 ½ cups carrot matchstick cut
  • 2 ½ cups broccoli florets small
  • ¾ cup teriyaki sauce storebought or homemade recipe below, favorite
  • 1 ½ cups rice cooked according to package directions

Homemade Teriyaki Sauce

  • ¼ cup honey
  • ½ cup coconut aminos or soy sauce
  • 1 clove garlic grated
  • ¼ teaspoon ginger grated fresh

Instructions

  1. Place the chicken onto a cutting board and pat dry with paper towels. Using a sharp knife, cube the chicken into 1-inch pieces.
  2. In a large skillet, heat 2 tablespoons of oil over medium-high heat. Add the chicken and brown for 2 to 3 minutes on each side. Transfer the chicken to a plate and set it aside.
  3. Heat the remaining oil in the skillet and add the veggies. Cook for 5 minutes or until they are slightly tender.
  4. Meanwhile, in a medium bowl, combine the honey, coconut aminos or soy sauce, garlic, and ginger. Whisk until smooth.
  5. Add the chicken and teriyaki sauce to the veggies and stir to coat the ingredients with the sauce. Cover the skillet with the lid and remove it from heat.
  6. Scoop some rice into a bowl and top with the chicken and veggies.
