Chili Stuffed Peppers Recipe

Chili Stuffed Peppers use large bell peppers hollowed and filled with chili, topped optionally with cheddar and mozzarella cheese, then baked until peppers soften and the chili is hot and bubbling. This flexible recipe adapts to any kind of chili, and the roasting melds the flavors while softening the pepper for a satisfying, hearty dish.

Description

This recipe features large bell peppers prepared by removing tops and seeds, then filled generously with a chosen chili recipe such as paleo, Irish, BBQ chicken, or vegetarian variants. The peppers are arranged in a baking dish and topped with shredded cheddar and mozzarella cheese if desired, adding a melty, savory layer during roasting.

Baked at 400°F for about 30 minutes, the peppers become tender yet retain shape, while the chili filling heats thoroughly and the cheese bubbles golden on top. This dish transforms leftover or freshly made chili into a handheld-style entrée with colorful bell peppers adding sweetness and moisture contrast to the spicy chili.

The recipe suits using various chili types and is convenient for repurposing chili leftovers into a visually appealing and warming meal.

The noted cooking time excludes the chili preparation, focusing on the roasting and assembly step.

Ingredients

Servings
  • 1 batch chili includes paleo, Irish, BBQ chicken, or black bean and corn chili varieties
  • 6 large bell pepper
  • ¼ cup cheddar cheese optional, shredded
  • ¼ cup mozzarella cheese optional, shredded

Instructions

  1. Start by making your choice of chili recipe. If you have leftover chili, this is a great recipe to use it up!
  2. Preheat your oven to 400 degrees Fahrenheit. Carefully cut the tops off of the bell peppers and remove the seeds and membranes inside. Fill the peppers with the chili, all the way to the top. If you're using the cheese, sprinkle the cheese on top.
  3. Place the chili stuffed peppers in a baking dish and pop them into your oven. Let the peppers roast for about 30 minutes, or until the chili is bubbling and hot and the peppers have softened.

Notes

  • The listed cook time applies to roasting the peppers; plan additional time for making the chili if starting from scratch.
