Description

This almond jelly combines unsweetened almond milk, granulated sugar, and agar powder, which is heated carefully just to boiling to activate the setting properties of agar without boiling over. After removing from heat, almond extract is stirred in for a mild nutty essence. The mixture is strained to ensure a silky texture and poured into a mold to cool and set in the refrigerator.

Once set, the jelly is cut into cubes and served with canned mixed fruit or fresh fruit pieces, complementing the soft, smooth texture and gentle almond flavor. The jelly offers a light, subtly sweet treat popular in Chinese cuisine.

Almond jelly:

  • 250 ml almond milk unsweetened
  • 25 g granulated sugar or to taste
  • ½ teaspoon agar powder
  • ½ teaspoon almond extract

For serving:

  • 1 can mixed fruit cocktail or assorted fresh fruit of your choice

Instructions

  1. Combine almond milk, sugar, and agar powder in a small saucepan.
  2. Bring the mixture up to a boil over medium heat for about 1-2 minutes. (Be careful not to let the almond milk bubble over).
  3. Remove the mixture from heat and stir in the almond extract.
  4. Strain the mixture through a sieve into a small glass container or your desired mold and let it cool.
  5. Use a spoon to remove any bubbles on the surface.
  6. Chill in the fridge for 1-2 hours, or until set.

Serve:

  1. Cut almond jelly into small cubes and serve in a glass or bowl with mixed fruit cocktail.
