Chinese Chews

Chinese Chews are a dense, chewy baked slice combining dates and walnuts with a lightly sweetened egg batter. The addition of vanilla and melted butter enriches the flavor and moistness. This bar-like treat has a golden crust and a soft interior studded with chopped fruit and nuts.

Description

Chinese Chews start by whipping eggs until pale and fluffy, gradually incorporating sugar before folding in chopped dates and walnuts for texture. The dry ingredients—plain flour, baking powder, and salt—are sifted and combined gently with the wet mixture. Melted butter and vanilla add richness and aroma.

Baked in a lined slice tin until golden and firm, these bars develop a slightly crusty exterior while maintaining a moist chew within. Cooling partially in the tin helps them set for clean slicing.

They can be served as a snack, tea-time treat, or casual dessert with comforting flavors from the nuts and dates. The balance of sweetness and texture provides substance without heaviness.

  • 2 egg
  • 1 cup caster sugar
  • 1 cup dates finely chopped
  • 1 cup walnuts roughly chopped
  • ¾ cup plain flour
  • ½ teaspoon baking powder
  • pinch salt
  • 1 teaspoon vanilla extract
  • 30 grams butter melted

Instructions

  1. Grease a slice tin (approx 28 x 18cm) and line with baking paper, leaving paper overhanging at sides to assist with removal of slice later.
  2. Pre-heat oven to moderate (180 degrees celsius, fan-forced).
  3. Beat the eggs on med-high for 5 minutes or until pale coloured and fluffy.
  4. Add the sugar slowly while beating on low speed. Once added, beat on med-high speed again for one minute.
  5. Mix in the dates and walnuts.
  6. Sift the flour, baking powder and salt and fold into the mixture.
  7. Add the butter and vanilla extract and stir to combine.
  8. Pour mixture into slice tin and use a spatula to spread out evenly in tin.
  9. Bake for 25-30 minutes or until a golden-brown colour and firm to touch.
  10. Allow to cool to a warm temperature in the tin, then remove using the overhanging baking paper. Cut into squares and allow to cool completely on a cooling rack.
