Chinese Doughnut (Buffet Style)

These Chinese Doughnuts are made by frying refrigerated canned biscuits until golden brown and then coating them in sugar while still warm. The result is a lightly crisp, sweet doughnut with a tender interior. Controlling oil temperature and frying in small batches ensures evenly cooked pieces without excess oil absorption. Perfect for a sweet snack or dessert, they offer a simple way to enjoy a deep-fried treat using pantry ingredients.

Description

The recipe for Chinese Doughnuts uses regular canned biscuits fried in neutral oil heated to 350°F. Carefully maintaining this temperature prevents burning while achieving a golden, crispy exterior and a soft inside. Frying 2 to 3 biscuits at a time helps keep the oil temperature steady, preventing greasy doughnuts.

Once fried, the doughnuts are drained briefly on paper towels or a rack, then rolled in sugar while still warm. This allows the sugar to adhere well, creating a sweet coating typical of buffet-style Chinese doughnuts, known for their balance of crispy edges and fluffy centers.

Maintaining proper oil temperature and cutting down on overcrowding the fryer are key practical tips to achieve the right texture and minimize oil absorption.

Ingredients

Servings
  • 1 can Biscuit refrigerated
  • neutral cooking oil for frying, generic cooking oil
  • 1/3 cup sugar

Instructions

  1. Add enough oil to a deep fryer or large, deep heavy pot so that it is a couple of inches deep.
  2. Heat the oil to 350 degrees.
  3. Place 2 to 3 biscuits in the oil and allow them to lightly brown on one side, about 90 seconds. Be sure to fry only a couple at a time or the oil may cool too much and the donuts will absorb too much oil.
  4. Turn the biscuits over to brown on the other side.
  5. When the donuts are golden brown on both sides, transfer them to a wire rack or paper towels to drain for 15 seconds.
  6. Pour sugar into a small bowl.
  7. Dredge the warm donuts in the sugar.

Notes

  • Keep the oil temperature at 350°F to avoid burning the doughnuts or causing them to absorb excess oil.
  • Fry in small batches to maintain proper oil temperature and prevent overcrowding.
  • Choose regular canned biscuits without flaky layers for the best texture.
  • Coat the doughnuts in sugar while still warm so the sugar sticks well.
