Chocolate Banana Baked Oatmeal Cups

Chocolate Banana Baked Oatmeal Cups are the perfect easy breakfast recipe! Loaded with healthy ingredients (tons of protein!) they will fill you up and keep you full, plus a little chocolate to fix your sweet tooth too! They make a great healthy snack recipe too. Make them ahead for the week and reheat them for a grab and go breakfast on the run and they are freezer friendly!

Ingredients

  • 1 Tbsp Flaxseed
  • 3 Tbsp water
  • 2 c. old fashioned oats
  • 1 tsp baking powder
  • 1/2 tsp sea salt
  • 1 tsp cinnamon
  • 1 banana large ripe
  • 2 Tbsp coconut oil melted
  • 1 c. milk
  • 2 Tbsp brown sugar
  • 1 tsp pure vanilla extract
  • 1/2 c. chocolate chips mini

Instructions

  1. Preheat the oven to 350°F. Grease a muffin pan with nonstick cooking spray and set aside.
  2. Combine the ground flaxseed and water in a small bowl. Set aside while you prepare the other ingredients.
  3. Combine oats, baking powder, salt and cinnamon in a large bowl. Set aside.
  4. Combine mashed banana, flaxseed mixture, melted coconut oil, milk, brown sugar and vanilla extract in medium sized bowl.
  5. Add the wet ingredients to the dry ingredients and mix to combine. Stir in chocolate chips. Pour the mixture into the prepared muffin pan, filling each cup evenly. Bake for 20-25 minutes or until the cups are a golden brown on top and set in the middle. Remove from the oven and let the muffins cool in the pan for 5 minutes. Remove from the pan and serve warm.
