Ingredients
- 1 cup ripe banana mashed (approximately 2 large bananas)
- ½ cup brown sugar
- ½ cup butter melted, 1 stick
- 1 large egg
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ cup chocolate chips
Instructions
- Preheat oven to 350° F
- Line a 9x5 loaf pan with parchment paper or spray it lightly with baking spray.
- In a large mixing bowl, add the mashed banana, brown sugar, melted butter, egg, and vanilla extract and whisk together throughly.
- Add the flour and baking soda and blend until no lumps are remaining. (careful not to overmix)
- Add in the chocolate chips and gently stir to combine.
- Pour the batter into the prepared loaf pan. Top with a few additional chocolate chips if you'd like.
- Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
- Remove from the oven and place the pan on a sire cooling rack for 10-15 minutes.
- Then remove the bread from the pan and allow it to cool completely prior to slicing.
Notes
- Store leftovers in an airtight container in the refrigerator for 3-5 days.
- The riper the bananas the better!
- Measure flour by spooning it into a measuring cup and leveling off with the back of a knife to help ensure you don't add to much which will make the bread more dry.
- Use dark chocolate chips, semi-sweet chocolate chips or milk chocolate chips.
- Substitute ½ cup unsweetened applesauce for butter for healthy, low-calorie version.
- Use gluten free one-to-one flour if desired.
- Use light or dark brown sugar.
