Chocolate Chip Marshmallow Cookie Bars

The combination of graham crackers, melted chocolate, and gooey marshmallows in these chocolate chip marshmallow cookie bars will bring back your fond campfire memories. All without the smoke.

Ingredients

Servings
  • cup unsalted butter plus more for greasing the pan, 5.3 ounces or 151 grams
  • 6 graham cracker whole or 3.2 ounces/90 grams crumbs
  • cup all-purpose flour bleached, 3.0 ounces or 83 grams
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ cup dark brown sugar 3.4 ounces or 96 grams
  • 1 egg large
  • 1 egg yolk
  • ½ teaspoon vanilla extract
  • 8 ounces semisweet chocolate chips or bittersweet chocolate chips

Topping

  • 2 graham cracker whole, broken into pieces
  • 1 cup mini marshmallows
  • 4 ounces semisweet chocolate chips or bittersweet chocolate chips

Instructions

  1. Preheat the oven to 325°F. Grease an 8 inch or 9 inch square baking pan.
  2. Brown the butter by heating it on medium-low in a small pot. The butter will melt and bubble. Turn off the heat when the bubbling stops. The butter should have darkened and smell slightly nutty. Remove from heat and let cool slightly.
  3. Pulverize the graham crackers in a food processor or by hand and add it to a medium bowl.
  4. Sift the flour, salt, baking powder, and baking soda into the bowl with the graham crackers and whisk to mix.
  5. In the bowl of a stand mixer (or another medium bowl if using a hand mixer or mixing by hand), combine the sugar and brown butter.
  6. Add in the egg and egg yolk and beat on medium speed for one minute.
  7. Add the vanilla and beat on medium speed for one minute.
  8. Stir in the dry ingredients by hand and then add the chocolate chips and mix.
  9. Spread the mixture evenly in the prepared pan and bake for 25 to 30 minutes, until the bars start to brown and pull away from the sides of the pan, a toothpick inserted in the middle comes out clean, and the cookie feels somewhat firm.
  10. Take the pan out of the oven and set the oven to broil with a rack 6 to 8 inches from the broiler.
  11. While the broiler is heating, add the graham cracker pieces and then the mini marshmallows to the pan.
  12. Broil for 45 to 60 seconds, watching closely, until the marshmallows have achieved your ideal brownness.
  13. Remove from the oven, sprinkle on the chocolate chips, and cover with foil for 5 to 10 minutes.
  14. These chocolate chip marshmallow cookie bars can be stored at room temperature for up to one week.

Notes

  • If you are using a kitchen torch to brown the marshmallows, you can line your pan with greased parchment paper so you can lift the s'mores bars out of the pan to cut them.
  • Use light brown sugar if you don't have dark brown. Dark brown sugar just has a little bit more molasses in it, giving your cookie bars a slightly richer flavor. You can read more about the difference in sugars here in this great read from Serious Eats.
  • Sub in chopped chocolate or chips of any kind. The topping should take about 4 ounces of whatever chocolate you prefer.
