Description
This recipe involves melting chocolate chips or baking chocolate with vegetable oil in short intervals until smooth. Fresh strawberries are dipped by holding the stem or leafy crown to coat most surfaces evenly in chocolate, then placed on a parchment-lined tray. Optional coatings such as coconut, nuts, or sprinkles can be applied immediately after dipping.
The coated berries chill in the refrigerator until the chocolate firms to a delicate, shiny finish. The oil helps the chocolate stay softer, preventing brittle cracking when bitten. This dessert highlights the contrast between the juicy strawberry and creamy chocolate.
Storage and timing are critical; strawberries are best served the day they are made for optimal freshness. After 12 hours, they may begin to release moisture, causing the chocolate layer to sweat or soften. Using cooking or baking chocolate is essential over eating chocolate for smooth melting and setting results.
Ingredients
- 1 cup (175g) chocolate chips (Note 1)
- 2 tsp vegetable oil (or grapeseed oil, canola, peanut or other neutral oil) (Note 2)
- 500g / 1 lb strawberries (~25 strawberries, depends on size, Note 3)
Optional - for coating
- desiccated coconut
- nut crushed
- Sprinkles
- Other coating of choice
Instructions
- Line a tray with baking paper (parchment paper).
- Place chocolate in a microwave proof bowl.
- Microwave on high in 30 second bursts, stirring in between, until smooth (see video).
- Pick up a strawberry by its stem, or gather up the leaves around the stem to get a grip hold on the strawberry.
- Dip into the chocolate, rolling to coat most of it (see video), the place onto the tray.
- Repeat with remaining strawberries.
- If using coconut / nuts or other coating, dip into the coating then lay on tray.
- Refrigerate for 30 minutes or until chocolate is firm.
- Best served within 12 hours of making. (Note 4)
Notes
- Use cooking or baking chocolate rather than eating chocolate for a smooth melt and proper set.
- Adding vegetable oil to the chocolate creates a shinier finish and softer texture once set.
- Dark, milk, or white chocolate can be used according to preference.
- Best consumed within 12 hours to avoid softened, sweating chocolate and overly juicy strawberries.
- Recipe quantities are suitable for about 25 medium strawberries (around 1 lb).
