Chocolate Easter Bird's Nest Cookies Recipe
Description
This recipe forms Easter-themed nests with chow mein noodles mixed into melted chocolate blends. The dark chocolate nests incorporate peanut butter and a pinch of sea salt for depth, while the white chocolate nests have butter and salt to balance sweetness. After coating the noodles, they are shaped into small nests on parchment and left to set until firm, which can be expedited in the refrigerator.
Once set, the nests resemble bird’s nests filled with mini chocolate eggs or jelly beans, adding color and sweetness. The contrast between crunchy noodles and smooth chocolate offers an appealing texture, and the peanut butter adds a subtle nuttiness to the dark chocolate version.
These treats make playful and seasonal desserts or snacks, especially around Easter celebrations. They are easy to prepare without baking and can be stored until serving. Serving with tea or coffee complements the sweet and salty flavors nicely.
Ingredients
- 2 cups Chow Mein noodles divided, dried
- 2 ounces chocolate chips
- 1 tablespoon peanut butter all-natural
- 2 teaspoons butter divided
- 2 pinches salt sea salt
- 2 ounces white chocolate
- ½ cup mini chocolate eggs or jelly beans
Instructions
- Place parchment paper over a baking sheet. Divide the chow mein noodles evenly between 2 small bowls.
- Melt the chocolate chips, peanut butter, 1 teaspoon of the butter, and a pinch of sea salt either in your microwave or in a small pan over low heat. When it's melted, stir it well then pour it over the chow mein noodles in one bowl.
- Mix the noodles and chocolate well then create 4 small nests with the chocolate noodles on the prepared baking sheet.
- Next, melt the white chocolate with the remaining teaspoon of butter and a pinch of salt then pour it over the other bowl of chow mein noodles and toss to coat. Form into 4 nests on the baking sheet.
- Set the baking sheet aside for at least 2 hours. You can also place the nests in your fridge to speed things up.
- Carefully remove the nests from the baking sheet using an offset spatula or knife. Place little chocolate eggs or jelly beans inside the nests before serving. Happy Easter!
