Description

This recipe melts butter and brown sugar gently, mixing in oats and golden syrup to create a sticky batter pressed into a baking tin. Baking at moderate heat for 30 minutes softens the mixture, which firms up on cooling into chewy bars. The flapjacks are cut while warm for cleaner slices.

After cooling completely, dark chocolate is melted and drizzled over the bars, adding a bittersweet contrast to the sweet oat base. The use of golden syrup contributes a deep sweetness and chewiness that balances the texture.

Salt can be added to enhance flavor, though it was omitted here for children. Using gluten-free oats ensures the bars are suitable for gluten-intolerant diets. Careful heating of butter prevents splitting but does not affect final texture.

  • 250 g oats
  • 130 g butter plus extra for greasing
  • 125 g light brown sugar
  • 6 tablespoon golden syrup
  • 100 g chocolate dark

Instructions

  1. Preheat your oven to 180°C/160°C(fan)/350°F/Gas 4. Grease and line an 8x10" (200x250cm) baking tin.
  2. Put 130 g Butter and 125 g Light brown sugar into a pan and melt over a gentle heat.
  3. Remove from the heat and stir in 250 g Oats and 6 tablespoon Golden syrup. Mix well.
  4. Press the oat mixture into the tin, smoothing out. Bake for 30 minutes. It will feel soft when removed form the oven, but will harden on cooling.
  5. Cut into slices while warm and drizzle with 100 g Chocolate (melted).

Notes

  • Avoid overheating the butter to prevent separation; this doesn’t significantly change taste or texture.
  • A pinch of salt enhances flavor but can be omitted for a milder taste suitable for children.
  • Use certified gluten-free oats to make the flapjacks gluten-free.
  • Allow flapjacks to cool fully before cutting to ensure clean edges and proper firmness.
