Chocolate Melting Moments
Description
These Chocolate Melting Moments use butter creamed with caster sugar, combined with self-rising flour and cocoa powder to create a soft dough. The dough is formed into walnut-sized balls, rolled in porridge oats, and flattened before baking. The oats add texture contrast to the tender crumb. Adding a chocolate chip on top is optional for extra chocolate bursts.
The biscuits bake at moderate heat, developing a delicate, slightly crisp exterior with a moist interior. Cooling them briefly after baking helps them set evenly and prevents breakage.
Chocolate Melting Moments can be served as a treat with tea or coffee or packed for snacks. Their soft texture contrasts with the oat coating for a pleasant mouthfeel.
Ingredients
- 100 g butter softened or margarine, 1/4oz
- 100 g caster sugar 1/4oz
- 100 g self-rising flour 1/4oz
- 25 g cocoa powder preferably Bournville, 1 oz
- 20 chocolate chips optional, or chocolate pieces
- porridge oats for coating
Instructions
- Pre-heat the oven to 175°C.
- Grease 2 baking sheets.
- Cream the butter/margarine and sugar together with an electric whisk until pale.
- Using a wooden spoon, mix in the sifted flour and cocoa until they form a paste.
- Shape into small walnut sized balls (should make 15 - 20). I use a couple of teaspoons but you can just use your hands if you wish.
- Roll the balls in the plate of oats to coat.
- Place the balls on the baking sheets and press down with a fork on each one.
- Decorate with a chocolate chip if wished.
- Put in the oven and bake for 14 - 15 minutes.
- When ready leave for a minute and then transfer the biscuits with a palette knife to a wire rack.
