  • 1 cup milk chocolate chips or semi-sweet chocolate chips
  • 3 tbsp coconut flour
  • 2 tbsp honey
  • 1 tsp coconut oil
  • 1 tsp vanilla extract
  • pinch of salt

Topping

  • sea salt flaky

Instructions

  1. In a mixing bowl, stir creamy peanut butter, honey, and vanilla extract until well combined.
  2. At the same time, add in coconut flour and pinch of salt. Stir until combined. 
  3. Line a baking sheet with parchment paper. Use a cookie scooper to form batter into balls and place on sheet.
  4. Freeze for 15-30 minutes.
  5. While the truffles harden, prepare the chocolate coating. Melt 1 cup of chocolate chips with coconut oil and microwave in 30 second intervals until smooth, stirring between each interval.
  6. Drizzle on peanut butter balls.
  7. Top with flaky sea salt.
  8. Freeze again until chocolate hardens. Enjoy!

Notes

  • Store truffles in an airtight container in the fridge for up to one week.
  • They can be frozen for up to five months for longer storage.
