Chocolate Peanut Butter Truffles
Description
This recipe combines creamy peanut butter with honey and vanilla extract, then mixes in coconut flour and a pinch of salt for a thick consistency suited for shaping. The mixture is formed into balls and frozen briefly to firm them up. Meanwhile, milk chocolate chips are melted with coconut oil, creating a smooth coating. The peanut butter balls are drizzled or dipped in the chocolate, then garnished with flaky sea salt to balance sweetness and add texture. The truffles are returned to the freezer until the chocolate hardens.
The truffles keep well when stored refrigerated in an airtight container or frozen for longer preservation. The use of coconut flour contributes to the structure while keeping the center moist. This treat offers a rich, indulgent flavor and a satisfying combination of creamy, sweet, and salty elements ideal for snack or dessert.
Ingredients
- 1 cup peanut butter creamy
- 1 cup milk chocolate chips or semi-sweet chocolate chips
- 3 tbsp coconut flour
- 2 tbsp honey
- 1 tsp coconut oil
- 1 tsp vanilla extract
- pinch of salt
Topping
- sea salt flaky
Instructions
- In a mixing bowl, stir creamy peanut butter, honey, and vanilla extract until well combined.
- At the same time, add in coconut flour and pinch of salt. Stir until combined.
- Line a baking sheet with parchment paper. Use a cookie scooper to form batter into balls and place on sheet.
- Freeze for 15-30 minutes.
- While the truffles harden, prepare the chocolate coating. Melt 1 cup of chocolate chips with coconut oil and microwave in 30 second intervals until smooth, stirring between each interval.
- Drizzle on peanut butter balls.
- Top with flaky sea salt.
- Freeze again until chocolate hardens. Enjoy!
Notes
- Store truffles in an airtight container in the fridge for up to one week.
- They can be frozen for up to five months for longer storage.
- Stir the chocolate frequently while melting to prevent it from seizing and ensure a smooth coating.
