Chop Suey

Chop Suey is a delicious Chinese dish that's perfect for using up leftovers. Made with chicken, broccoli, and baby corn tossed in sauce.

Ingredients

Servings

Chop Suey Sauce:

  • 2/3 cup soy sauce low sodium
  • 1/2 cup chicken broth
  • 1/3 cup mirin
  • 1/4 cup hoisin sauce
  • 1 tablespoon sugar
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 4 cloves garlic , minced
  • 1/4 teaspoon red pepper flakes crushed
  • 2 tablespoons cornstarch
  • 1/3 cup water

Chop Suey:

  • 2 tablespoons vegetable oil
  • 2 chicken breast cut into thin bite sized slices
  • 1/2 cup chicken broth
  • 2 cups broccoli florets
  • 8 ounces bamboo shoot sliced and drained well, canned
  • 8 ounces water chestnut sliced and drained well, canned
  • 15 ounce baby corn drained well, canned
  • 1 zucchini , cut into 1/2" thick half moons

Instructions

Chop Suey Sauce:

  1. In a medium bowl whisk together soy sauce, chicken broth, mirin, hoisin sauce, sugar and sesame oil.
  2. In a skillet add the vegetable oil and chicken on medium high heat in batches.
  3. Sear the chicken for 2 minutes on each side.
  4. Remove the chicken from the skillet, set aside.
  5. Add in the garlic, stir and cook on medium-high heat for 30 seconds.
  6. Add the sesame oil mixture to the pan and bring to a boil.
  7. Simmer for 1 minute then whisk together the cornstarch and water and add it to the pan.
  8. Bring to a simmer and cook for 1 minute until thickened.

To finish:

  1. Add the vegetable oil to a large heavy skillet (that you have a lid for)
  2. Cook the chicken on high heat, 3-4 minutes per side until seared.
  3. Remove the chicken, lower heat to medium and add chicken broth, broccoli, bamboo shoots, water chestnuts, carrots, baby corn and zucchini.
  4. Cover and steam for 4-5 minutes.
  5. Remove lid, let chicken broth cook off and add the chicken and stir fry sauce to the pan.
  6. Toss to combine, garnish with green onions or sesame seeds.
