Ingredients

  • 2 Persian cucumbers diced
  • 1/4 cup Pepperoncini sliced (optional)
  • 1 small bell pepper diced (any color)
  • 2 medium tomatoes diced
  • 1/2 cup red onion diced
  • 2/3 cup kalamata olives halved
  • 1/2 cup feta cheese crumbled
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1/2 teaspoon dried basil
  • 1 1/4 teaspoons dried oregano
  • salt to taste

Instructions

  1. Combine all chopped ingredients in a large salad bowl.
  2. Crumble feta cheese over the chopped vegetables.
