Christmas Linzer Cookies with Raspberry Preserves

These Linzer cookies are tender, buttery rounds with delicate centers filled with raspberry preserves. Lightly dusted with powdered sugar just before serving, the cookies maintain a soft texture and a sweet-tart contrast thanks to the jam. Their buttery dough is flavored with vanilla and balanced with a touch of salt, making them a festive treat during the holidays.

Description

Christmas Linzer Cookies with Raspberry Preserves consist of buttery cookie dough made from flour, sugar, softened butter, and vanilla extract. After chilling, the dough is rolled thin and cut into circles, half of which are topped with smaller cutouts to reveal the jam filling once baked.

The cookies bake until their edges lightly brown, yielding a crisp texture that contrasts with the smooth, sweet raspberry preserves sandwiched in the center. Dusting with powdered sugar adds a festive touch and a slight sweetness that complements the jam's tartness.

These cookies are suitable for holiday gatherings, gift-giving, or an elegant treat alongside tea or coffee. Because the powdered sugar can absorb into the jam, dusting just before serving keeps the cookies looking fresh and appealing.

Ingredients

Servings
  • 3 cups all-purpose flour plus more for dusting
  • ¾ cup white sugar
  • 1 ½ cups butter softened
  • 2 tablespoons water
  • ½ teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • ¾ cup raspberry preserves Bonne Maman brand
  • powdered sugar for dusting

Instructions

  1. Preheat the oven to 350 degrees.
  2. In the bowl of a stand mixer mix together the butter, sugar and vanilla with the paddle attachment until just combined.
  3. Add the flour, water and salt and mix on low speed until the dough comes together in a uniform mass. Transfer the dough to your work surface and shape into a flat disk. Wrap with plastic wrap and place in the fridge for 30-60 minutes.
  4. Once chilled, sprinkle some flour on the dough and roll the dough out to a uniform ¼ inch thickness and, using a cookie cutter, cut out as many cookies as possible. Rework any leftover dough and repeat until no dough remains, adding a few tablespoons of flour if it's still sticky. Using a smaller cookie cutter, make holes in the middle of half of your rounds. Place cookies on a parchment lined baking sheet and chill for an additional 15 minutes prior to baking
  5. Bake the cookies for 15 - 20 minutes, until the edges begin to brown. Allow the cookies to cool to room temperature.
  6. Dust the cut out cookies with confectioners' sugar and spread raspberry preserves on each solid cookie. Sandwich your cookies together and serve.

Notes

  • Dust the cookies with powdered sugar immediately before serving to prevent it from absorbing into the raspberry preserves.
  • Use good quality raspberry preserves to provide a balanced sweetness and flavor contrast.
  • Chilling the dough before rolling helps maintain the cookie shape when baking.
