Description
Cinnamon Biscuits combine creamed butter and light brown sugar with egg and vanilla extract to form a base. Flour with baking powder, cinnamon, and ground ginger is sifted in and mixed to create a soft dough. The dough is rolled out about 0.5 cm thick and cut into shapes before baking at moderate oven temperature until lightly browned.
The baked biscuits offer a soft yet slightly firm texture with gentle spicy warmth from cinnamon and ginger. They remain soft when warm but firm up upon cooling, providing a pleasant crumb structure. Dough thickness controls the biscuit density.

Ingredients
- 100 g light brown sugar
- 125 g butter
- 300 g plain flour
- 2 teaspoon baking powder
- 2 teaspoon ground cinnamon
- 0.5 teaspoon ground ginger
- 1 egg
- 0.5 teaspoon vanilla extract
Instructions
- Preheat your oven to 180°C/160°C(fan)/350°F/Gas 4.
- Beat together 100 g Light brown sugar and 125 g Butter until smooth.
- Add 1 Egg and 0.5 teaspoon Vanilla extract and mix. Sieve in 300 g Plain flour and 2 teaspoon Baking powder and add 2 teaspoon Ground cinnamon and 0.5 teaspoon Ground ginger.
- Mix together to form a ball of dough.
- Transfer to a floured surface and roll out to about 0.5cm/0.25 inch thick.
- Cut into shapes and put on a lined baking tray.
- Cook for 12-15 minutes. Cool on a baking tray and decorate as you like.
Notes
- Allow biscuits to cool fully before eating as they firm up after baking.
- Make orange icing by mixing fresh orange juice with icing sugar, optionally adding cinnamon.
- Adjust cinnamon and ginger amounts to taste, or substitute nutmeg.
- Dip cooled biscuits in dark chocolate for a richer treat.
