  • 2 active dry yeast packages (quantity unspecified
  • 1/3 cup water warm
  • 1 cup milk warm
  • 2 egg lightly beaten, plus 1 egg yolk
  • 1/2 cup granulated sugar
  • 1/2 cup butter softened
  • 1-1/4 teaspoons salt
  • 5-1/2 to 6-1/2 cups flour
  • 2/3 cup light brown sugar packed
  • 3 tablespoons cinnamon

Instructions

  1. In a large bowl, dissolve yeast in water. Add milk, eggs, granulated sugar, butter, salt, and 2-1/2 cups flour; beat until smooth.
  2. Stir in enough remaining flour to form a soft dough.
  3. Turn onto a floured surface; knead until smooth and elastic.
  4. Place in a greased bowl, turning once to grease both sides. Cover and let rise in a warm place until doubled, about 1 hour.
  5. Punch the dough down and divide it in half. Roll each half into a rectangle, approximately 8 x 16 inches.
  6. In a small bowl combine cinnamon and brown sugar and sprinkle half of this mixture over each rectangle.
  7. Roll up each rectangle from the short end, pinching seams to seal.
  8. Place each roll seam side down into a greased 9 x 5-inch loaf pan.
  9. Cover and let rise until doubled.
  10. Bake in a preheated oven at 350ºF for 30-35 minutes or until golden brown.
  11. Remove from pans and let cool on a wire rack.
