Cinnamon Honey Butter Roasted Acorn Squash Rings

Ingredients
- 1 acorn squash cut into rings, seeds and membranes discarded
- 2 tbsp salted butter softened to room temperature
- 3-4 tsp honey to taste (more or less depending on desired sweetness)
- ¼ tsp cinnamon
- Pinch of salt
Instructions
- Preheat the oven to 375 degrees. Line a baking sheet with parchment paper.
- Using a sharp chef's knife, cut the ends off the acorn squash then slice into rings.
- Cut the seeds and membrane out of each ring.
- Place onto the prepared baking sheet.
- Combine the softened butter with honey, cinnamon, and salt; mix until well combined and creamy.
- Brush just a little bit of cinnamon honey butter on the bottom of the rings then return to the baking sheet.
- Brush more of the cinnamon honey butter on the top and insides of the rings; reserving some of the honey butter for later use.
- Place the squash into the oven and roast for 20-25 minutes, or until tender.
- Remove from the oven.
- Place the remaining honey butter into the microwave for a few seconds until melted.
- Drizzle the melted honey butter over the squash rings.
- Serve immediately. Enjoy.
