Description

Cinnamon Horchata Rice Pudding uses rice simmered gently in a mixture of almond milk, rice milk, sugar, vanilla, cinnamon sticks, and cloves until it softens and thickens to a creamy consistency. The use of aromatic spices such as cinnamon and cloves imparts warm, fragrant notes that evoke traditional horchata flavors. Both long-grain and Arborio rice are suitable; Arborio yields a slightly creamier texture due to its starch content.

The slow simmering over low heat allows the rice to absorb the spiced liquids, creating a comforting pudding with a tender bite. After cooking, the cinnamon sticks and cloves are removed for texture and served with a sprinkle of ground cinnamon to enhance the warm spice profile.

  • 1 cup long-grain rice or Arborio Rice
  • 1/4 cup granulated sugar
  • 2 cups almond milk vanilla-flavored
  • 3 cups rice milk
  • 1 teaspoon vanilla extract Mexican
  • 2 cinnamon stick
  • 2 cloves
  • ground cinnamon to garnish

Instructions

  1. In a large saucepan, combine rice, sugar, almond milk, rice milk, vanilla extract, cinnamon sticks, and cloves. 
  2. Bring to a boil and then lower heat to low heat and simmer the rice until it is very soft and achieves a thick, pudding-like consistency, about 35 minutes. Cover and let rest for 10 minutes. 
  3. Remove the cinnamon sticks and cloves. 
  4. This rice pudding can be served warm or chilled and sprinkled with ground cinnamon. 

Notes

  • Both long-grain rice and Arborio rice can be used; Arborio rice results in a creamier and slightly chewy texture.
