Coconut Curry Noodle Bowls
Description
This recipe starts by gently sautéeing onion, garlic, and fresh ginger in canola oil, building a fragrant base. Adding green curry paste, brown sugar, chicken broth, soy sauce, turmeric, and canned coconut milk creates a rich and colorful curry broth. Simmering blends the flavors while softening the spices.
Cooked udon noodles provide a chewy texture that complements the creamy sauce. Shredded chicken is stirred in near the end to warm without drying out. The final bowls are garnished with fresh cilantro, lime juice, peanuts, and options like Sriracha or peanut butter to tailor the heat and richness.
This noodle bowl is flexible: you can adjust spice levels with chili paste and swap noodles if preferred. The creamy coconut broth and aromatic spices make it a comforting meal that balances protein, noodles, and vibrant curry flavors in one dish.
