  • 1 onion small or 1/2 large, finely diced
  • 2 garlic finely diced, cloves
  • 2 teaspoons ginger finely diced, fresh
  • 1 1/2 - 2 Tablespoons green curry paste
  • 2 Tablespoons brown sugar
  • 3 cups chicken broth
  • 1 Tablespoon soy sauce
  • 1 1/2 teaspoon turmeric powder
  • 1 - 15 ounce coconut milk full-fat, canned
  • 2 - 3 cups chicken from poached or rotisserie, shredded
  • 8- ounce udon noodles cooked according to package instructions (if you desire more noodles, double the noodles, or rice noodles
  • **If you would like to add a little spice add 1-2 teaspoons of garlic chili paste
  • GARNISH:
  • cilantro
  • lime juice fresh
  • peanuts
  • Sriracha sauce
  • peanut butter

Instructions

  1. Heat large pot over medium-high heat. Add oil. Stir in onion and cook for 5 minutes. Stir in garlic and ginger and cook for 2 minutes longer.
  2. Stir in green curry paste, brown sugar, chicken broth, soy sauce, turmeric, and coconut milk. Simmer for 10 minutes.
  3. Meanwhile, cook udon or rice noodles according to package instructions.
  4. Stir in chicken. Cook for 2-3 minutes.
  5. Ladle coconut curry sauce with noodles in bowls. Garnish with cilantro, sriracha sauce, and peanuts.
