Coconut Lemon Energy Balls Recipe
Description
The Coconut Lemon Energy Balls Recipe combines raw cashews and shredded coconut with fresh lemon zest and juice to create a tangy and creamy base. Honey and coconut oil add sweetness and binding, while ground turmeric contributes a vibrant yellow hue without affecting the flavor noticeably. The ingredients are processed together until combined and chilled for at least an hour to firm up.
After chilling, the mixture is shaped into 24 uniform balls that can be garnished with shredded coconut or poppy seeds, adding texture and visual appeal. These bite-sized snacks have a moist yet firm texture and a bright lemon flavor complemented by the mild nuttiness of cashews and coconut.
They are suitable as a portable, no-bake snack or light energy booster that can be stored in the refrigerator for up to a week. The use of natural ingredients and the absence of baking makes these energy balls convenient and wholesome.
Turmeric’s inclusion is primarily for color and does not produce a noticeable taste when raw. Using rice syrup as a substitute for honey allows for a vegan variation. Refrigeration time is necessary to set the balls before rolling and serving.
