													This easy Slow Cooker version of a classic Sweet Potato dish is sure to be a crowd pleaser.

                                Ingredients
- 2 pounds sweet potatoes peeled and cut into 1-inch pieces
 - 1/4 cup packed brown sugar
 - 2 Tablespoons flaked sweetened coconut
 - 2 Tablespoons Chopped Pecans toasted
 - 2 Tablespoons butter melted
 - 1 teaspoon vanilla extract
 - 1/4 teaspoon ground cinnamon
 
Topping
- 1/3 cup flaked sweetened coconut
 - 1/3 cup Chopped Pecans toasted
 
Instructions
- Coat your slow cooker with cooking spray. Place first 7 ingredients in slow cooker and toss to combine. Cover and cook on LOW for 6 to 8 hours, or until potatoes are tender. Lightly mash mixture. Sprinkle topping over potatoes and serve warm.
