Cottage Cheese Brownies
Description
Cottage Cheese Brownies mix together cottage cheese, egg, unsweetened cocoa powder, powdered sweetener, peanut butter, and optional sea salt into a smooth, thick batter using a food processor or mixer. The batter is spread into a small lined baking dish for baking.
These brownies can be baked in an air fryer at 160°C (320°F) for about 19-22 minutes or in an oven at 180°C (350°F) for 24-26 minutes. The brownies are done when the top is set but the center remains slightly jiggly. Cooling them to room temperature and chilling for 30 minutes allows them to firm up for easier slicing.
The brownies offer a moist texture with a mild chocolate and peanut butter flavor and a slightly fudgy crumb. They are portioned into four servings with about 9g net carbs each, suitable for those monitoring carbohydrate intake.
Storage in the refrigerator is possible for up to 5 days, and these brownies freeze well for up to 3 months. Baking times may vary depending on air fryer models, so monitoring towards the end is recommended.
Ingredients
- ¾ cup cottage cheese 160g
- 1 egg large
- ½ cup cocoa powder 42g, unsweetened
- ½ cup powdered sweetener 80g
- 2 tablespoon peanut butter 32g, smooth
- pinch of salt optional, sea salt
Instructions
Brownie Batter
- Put all ingredients into a food processor or large mixing bowl. Blend until smooth. Stop in between to scrape down the sides with a spatula as to incorporate everything into a smooth, thick batter.
- Grease a 5x5 inch container and line with parchment paper.
- Fill the brownie batter into the container and smooth the top.
Air Fryer Method
- Preheat the air fryer to 160C / 320F.
- Add the dish with the brownie batter to the air fryer basket and air fry for 19-22 minutes. I baked mine for 21 minutes. ***see recipe notes
Oven Method
- Preheat the oven to 180C / 350F.
- Bake the brownies on the middle shelf for 24-26 minutes. ***see recipe notes
Cooling Time
- Let the brownies cool to room temperature, then chill them in the fridge for 30 minutes. This allows them to set fully. Only then, cut and serve.
Notes
- Check brownies from minute 18 in air fryer and place foil on top in oven if browning too quickly.
- Done brownies have set tops but slightly jiggly centers; toothpick test can be used.
- Store in fridge up to 5 days or freeze for up to 3 months.
- Recipe yields 4 brownies with 9g net carbs each.
